I’m looking to get a really nice dank character in the background of my otherwise fruity iPas. I’ve had a local IPA called citrapollo which is appropriately named considering it uses citra and Apollo. The balance between the dank and citrus is perfect so Id like to make something similar. My question is does anyone have any experience or suggestions on how to get that dank/weedy kind of character from the Apollo without overdoing it and ruining the beer? I’ve read a lot about Apollo and some seem to love it while some seem to hate it. I know for sure I like it but I’m not sure exactly how much to use and when to incorporate it.
