Common grains, sold in the supermarket, work well for brewing with unmalted grains/adjuncts? Or those sold in brewery stores have something special? Thanks!

The process of malting chemically modifies the grain to produce the enzymes needed for converting starches to fermentable sugars as well enzymes that break down the proteins so that the yeast can grow.

The unmalted supermarket grains don't have those enzymes and, by themselves, won't work in the mash by themselves. You will need quite a lot of proper malts to provide the enzymes needed to break down the starches in the unmalted grains.
