Let me start by saying I'm a hoppy beer kind of guy. I like lots of aroma and bite to my beers.
One of my buddies hosted a running event with about 70 people showing up this weekend. I told him I would brew a beer for the race.
I made a 8.2% dopplebock and decided to pitch the 1028 Wyeast london yeast so I could avoid some of the belgian clovy yeasts and lean towards a more estery matly dopplebock.
Well I attenuated to 1.028 which was WAY high. It was definately too sweet for my palate but in an hour everyone burned thru 5 gallons. The women especially liked it.
So dont despair even if you brew something you think did not turn out right there are many different palets out there who will LOVE it!
