I've been wanting to do some kind of oak aged pale ale/IPA for a while now, so I'm in the process of creating a recipe. What are all of my options for types of wood chips to use? Is it possible to use pine at all?
I'd skip any soft wood....Especially pine. You would pickup some nasty resin compounds from the pine tar.
Oak is nice because of the vanilla like flavors it imparts, but even with oak, you don't want to run to Lows and pickup an oak 2x4 and stick it in your brew.
I am thinking that the market for oak barrels and oak chips at the LBS are what they are for a reason. I wouldn't screw around with it too much.
