Could a savvy smoked beer brewer please share the knowledge of when to add smoke ingredients to the brew? I am making a Oatmeal Stout and figured I would cold smoke [apple and cherry] several ounces each of my oats and malt.
Should I steep with malts etc to make the wort or should I drop during the boil to infuse more flavor?

You should always mash your grains with the other grains. You don't want to boil the grain and/or oats unless you are making oatmeal or porridge!
