Those are 1.065 IPAs. Way over-pitched from mason jars of S-05. I like to pitch as much yeast as possible. 63F probably answers the next question.

The only time I've ever had something even remotely close to this was during the period of time that I thought it would be a good idea to pitch right on top of the yeast cake from a previous fermentation. WAY too much yeast in that fermenter. WOW!!!! I learned a very good lesson. Didn't explode... luckily I caught it before the big bang and put a blow-off tube on it. But it sure would have made a mess if I hadn't been monitoring it.
But... it really does look like a good mess. Brewing beer is fun.
