As tittle states, I am thinking and trying to do my research. I have been brewing beer for about a year, so I do have some equipment, but not sure what I should/need to get, and i'm still learning. The wine is more for family than myself. So it is right now just an experiment. I plan on for this batch, bottling in beer bottles. I know it is not idea, but can work. Since I am not sure If I will be doing this more or not, i am holding off on getting a corker and wine bottles and corks.. The 1 gal Jars I know I will reuse for cider. I am trying to do this as cheap as possible to see if it is something I will do again, before investing.

Questions that I have is....
Would there be any other equipment I need other than what I have listed?
How do you degas in a 1 Gal Jar. (read a receipe in the forms where they degas after secondary?)
Back sweetening, for one gal any suggestions for a good mix to make it semi-sweet? and from what I have read, people use sugar/water mix. has anyone tried to do a strawberry syrup (strawberry/water/sugar mix) to back sweeten? ( Thinking of the strawberry crepes that I make).
Can I use tap water, or should i do RO water?
If I use RO water, should I add anything to it? (am I overthinking this?)
Items that I have:
2 gal Pale
yeast Nutrients
Racking cane
bottling bucket
bottles and caps
ph test strips(bought by mistake)
Hydrometer

items that I will be getting:
Acid Blend
Tannin
Pectic Enzyme
campden tablet
1 gal Jug (or would it be best for 2?)

Plus the strawberries, sugar, and yeast.
Thanks :)

Spring water contains calcium which the yeasts will like, distilled or filtered will work. NO TAP WATER, unless you can remove the chlorine fluoride etc, that the government seems to think we need. I did my degas by siphoning to a 1-1/2 gallon container to do the degas then siphoning back to my gallon carboy.
the strawberry syrup might be great idea as it will strengthen the strawberry flavor as well as sweeten.
other than that it looks like a much better plan than I had for my first gallon.
