Saison Blend #1 from Transient Artisan Ales, dry, funky, big mineral heavy profile with a light hop bitterness, modest earthy / noble hop aromatics and flavor, just a hint of lactic acidity. Light cracker like malt profile. Really good stuff that I wished I had purchased more of when I was last up in Bridgman.

Excellent. This is one of the best 4%abv saisons I've had.. Maybe not up there with Clara, but tasty. American Solera has a new one on too (collab with Jester King among others) that was even better though. It had a lot of classic saison phenols plus a bit of lactic tartness that killed. Can't wait for bottles of that.

This is probably the best saison brewed in Texas and easily top 2 or 3 Jester King beers. Not much has changed from original batches just maybe a bit more dry.

Late edit: Also ~$7 a bottle. Impossible to beat.

Wish I could have a never-ending supply of this at my house. One of my favorite beers. Right up there with Bam Biere and Taras Boulba.

This beer is so good that SeaWatchman served it at his wedding, and it's not Yuengling or Lambic.

Urban Family Brewing Through the Eyes of Babes, a 100% Brett fermented beer with Azacca.

Floral, citrusy, cracker like aroma, great off white head with great lacing and retention, dry and crisp, moderate bitterness with lots of hop aromatics, bit of a funky Brett character but could easily be a phenolic Belgian non-Brett strain. Good if a bit one note from the hop character, like a super dry Belgian IPA.

My problem with 100% Brett beers is that they just seem to lack character that a mixed fermentation of saccharomyces and brettanomyces would add, and especially on a "saison" this just seems kind of one dimensional and could easily be a Belgian IPA with something phenolic like the Ardennes strain.

Not bad, but not something I'd be looking to revisit.

Hard cosign. I feel the same way about single hop beers too. It's a fun stunt the first time so I can isolate a variable and go "yeah ok that's what that part does" but after a few sips I want complexity.

I feel much less strongly about the single hop beers, as I've had a lot of very good SMASH (Single Malt and Single Hop) beers from both homebrew and commercial beers (I love Founders Mosaic Promise for example).

For me, its the unexpected way that many Brett strains acts in isolation when pitched strongly compared to using them in conjunction with Sach in a mixed fermentation saison. I was really surprised how much more "funky" a beer can be when you pitch Brett B for example near the end of a saison fermentation (like say when Dupont / 3724 gets stuck on you) then when it is used alone to ferment a beer.

Now "experimental" single hop beers was an exercise that I don't look forward to as going back to a Simcoe / Mosaic or Galaxy / Citra beer after trying HBC 482 , 273, 263, etc... for 6 straight batches of IPA was glorious.

It's not just a problem with brett beers IMO, but US brewers throwing some crap together with 'their house strain' (aka 3711) and calling it a saison is just as much of a problem. It's the catch all category for over attenuated garden beers.

My problem with 100% brett fermented pales is they all taste like plastic to me.

Big pop as the cork came out. Extremely fragrant on the initial pour with intense tropical fruits and a touch of honeydew in the background. Flavor is very similar with a bit of peach and mango. Very light tartness accentuates the flavors.

Medium body with hefty carbonation. Mouthfeel is soft and delicate. Very mild bitterness helps carry everything through. Very complex yet insanely drinkable. Fantastic beer.

Can't wait to see what else comes out of this place. Out-of-the-park home run for an initial release.

Door County Brewing Pastoral

Sweeter than I like with less carbonation than is necessary for the style, but the yeast profile gives me a bit more than just 3711 fruity esters. Far from the best examples of the style, but works just fine while I'm fighting a cold.

What are some good Fantome to seek out? Found a store with a few different ones but didn't pull the trigger yet. Haven't had good luck with any bottles I've tried so far.

You don't like Fantome.
I've just had bad luck with bottles unless they intentionally taste like burnt rubber and rotten fruit. I think Magic Ghost and Chocolat were good bottles, just not my style. Just remembered I've also had Amazon Ghost, that one was alright.
