This new batch of modern times coffee is legit! I'm usually not fan of blends, but the black house (Ethiopia Hambela & Sumatra Mandehling) has plenty going on!
Ugh, my shipment somehow ended up in Cleveland according to USPS tracking. Baffling considering I'm under six miles from the brewery, but leave it to the USPS to **** things up. I'm hoping to get the beans sooner rather than later so I can dig into them.

I really like the Kalita, much easier to get a consistently good brew than with a v60
Couldn't agree more, got a Kalita Wave about six weeks ago after using the v60 for well over a year and it blew my mind how much easier it was to dial in a good cup, as well as get a solid cup when I'm not paying close attention to my technique.

What ratios/temps/times are you guys using with the Wave? Always curious to try alternate brewing methods and see how they compare to what I've been doing.
 
25g coffee. I use a Baratza Encore that I never calibrated so I'm not sure what my grind setting would equate to in terms of standardized grind settings
380g-400g water... been playing with this number recently.
starting water temp 204°
50g water for bloom
slow/constant pour if I feel patient, otherwise I pour in increments of ~75g water as the water recedes
haven't timed it recently, I'll have to check later

I usually only change 1 variable at a time if I want to change how my cup turns out
 
Recommendations on a pour over kettle?

It's cool because it allows you to dial in your coffee to the exact degree. And it's nice to see how some batches and different beans may give you different profiles by brewing it 5 degrees cooler, etc.

I usually do 40 grams of coffee to 625 ml of water ( this is also the maximum amount of coffee I'll use for one Kalita brewing session)
I have a Baratza Vitruoso grinder. On average I set the grind to the dial at 17, although some beans need slightly courser or slightly finer grinds.
204 degrees F on the bonavita
I don't use a scale while brewing, but I do a bloom for about 45 seconds, and then 4 more pours to use the rest of the water. It usually takes right around 3 minutes total brew time.

Funky Monsters' Park
Here's the story: six months after filling some bourbon barrels with Monsters' Park, we noticed that a couple of them showed signs of a Brettanomyces presence. The beer was still delicious and utterly unique, so rather than ditching the barrels, we decided to see where it would go if we amped up the process. So we added a few more Brett strains and a healthy lacto pitch, and let the whole thing age for another year. We don't usually go for sour stouts, but this beer is delicious: chocolatey, tart, and funky with a super smooth bourbon & oak presence from the extra long aging.

Neverwhere 100% Brett IPA
For those of you who have tried Neverwhere, you know what this beer is all about. While Brettanomyces is usually associated with funk, a 100% Brett fermented beer is not funky, at least not in the barnyardy way. Instead, the Brett behaves a lot more like a regular beer yeast, if regular beer yeast bought a one way ticket to Oz on the psychedelic marmalade train. Subsequently, Neverwhere tastes like an explosively flavorful pineapple crossed with an uber-tropical IPA, all wrapped in a warm blanket of radness.

Symmetric Orchestra 750ml Bottle
Symmetric Orchestra is an otherworldly sour beer fermented with over a dozen strains of Brettanomyces and aged on oak. After a careful kettle souring, this beer mingles with a veritable United Nations of funky cultures and wood until sufficient awesomeness has been achieved. The resulting beer is sour, deeply funky and resoundingly delicious, with a quenching fruitiness and lingering, oaky finish. Drink it, and be excellent to each other.

It's not as bad as I thought. Probably won't be pulling the trigger on all 8 bourbon barrel, but will max on the other 8.
 
think that's the proper game plan. Especially since they may get a very limited run in the wild at those shops that have a good relationship with MT. So I can spread out the damage to my wallet.
 
Hurry up and take my money...like...soooo much of it. Not even allowing my brain to do the math on this one. I don't even want to know.
