On cold days like this I'd rather be making bread instead of splitting wood.
 
Going to feed my started, Now!:D

The funny thing is a back when you sent Finsfan some starter. I wasn't sure what it actually was. So eventually after reading enough, I thought maybe I'll buy a starter. The last cold snap I decide to just make one from scratch. It's been a three weeks and getting better every time I make bread.

I have a question for those who make their own bread. How long does it stay good before going stale? I live by myself so I can only eat but so much bread .

Left on the counter - maybe two days
In the refrigerator - a week, microwave to rejuvenate
Frozen - up to a month.
 
Also depends on the fat content, flour,water and yeast will go stale a whole lot faster then a bread with eggs, oil or milk in it.


That's true. Why is that though? Does the fat essentially "waterproof" the flour and make it trap in moisture?
 
Alright pizza gods and goddesses, I'm getting ready for a few pies this coming weekend and since we're having people over for the game I want to do it right. How long should I be fermenting my dough? I know at least a day but I've read that a week is a bit too long.
 
Made a pie last night. Sourdough crust, cheese was mozzarella, provolone, and asiago, some bacon crumbled on top, sauce was just canned crushed tomatoes with herbs, garlic, salt, parmesan cheese and a little onion powder.

I modded a recipe for biscuit crust pizza my mom used to do. I made a double batch of biscuit dough. I used 6C of plain flour with 2C of spent grain flour from my latest IPA mash. 2TBSP baking powder,2tsp sea salt, & 1-1.5C of tub margerine. Enough milk to make a dough,split in half between to cookie sheets. I used 2 2/3's jars traditional pizza sauce between 2 cookie sheet size pizzas. Topped with thin sliced zuchini,onion,baby bella mushrooms, sweet pepper,ham & mozzerella & provalone cheeses. Drizzeled extra virgin olive oil over the top before cheese layer. The crust was crispy/firm & tasted kinda like a light rye.

Smoked Colby Sourdough Cooked in my woodstove on a bed of hickory and white oak coals. I can't wait for the wife to get home so I can try it.

I made some roasted garlic rolls this time. really good.

You can't mention a wood stove and not post up i picture! Indoor or out?

I threw a few fire bricks on the coals and put the bread in a cast iron skillet with a lid. I'm hoping to get the same smoked flavor I got the last time I did it this way.

I'm hoping to build a bread oven this summer. outside

Is there a bread thread? I've looked but haven't found one. I been want to ask some questions but didn't want to take away from the Pizza thread. I will be making a pizza this week when I feed my starter. I'm hoping this one is better then the last attempt I made.

I haven't seen one, can't hurt to start it and with the porn your putting up you'd be the perfect starter!
