So I am going along today on brew day and I am doing a double decoction mash, first stop at 148 and then 162. My first temp is about 144, that is well below the alpha amylase activity.

Not hitting the temp I quickly boiled a kettle of water and added it hitting the 148. My question is, should I care? Basically, if I am even 4 degrees off, I can let it sit for an extra 10min or something and let it go to town. It isn't affecting the body much at all so I don't know if I should even bother caring if my temp is 4deg lower than where it should be. Higher is never a problem since I just add a bit of water, but I think the temp was off because I didn't have enough liquor in the mash tun.

Alpha amylase has an optimum temperature range, but it is active at lower temperatures (like in your mouth). Extra time is all it takes.
