I'm in the process of building out a control panel. I plan to use a Auber Instrument SYL-1512A for basically a temperature read out from the boil kettle (which is gas and not electric). I plan to connect an alarm switch to it as well.

I assume I do not need to hook up an SSR and Contactor to the unit, right?

Sure, you need a contactor and SSR only if you want to control a heating element.
