I made a summer saison, it's been in primary for 1 week and looks milky. It could be best described as really light coffee; its opaque. I've never had this sort of rxn during fermentation. Just looking for feedback, perhaps it's normal.

It's been in primary for over week, and very milky.

Double step infusion - for medium body beers requiring a protein rest. Used primarily in beers high in unmodified grains or adjuncts.

With 25% of your grain bill being wheat I would say it's expected. I'm about to do a saison but it has only 8oz of white wheat malt. After it settles down and finishes fermenting it should clear up but still with that much wheat you'll have a haze.

Thanks, its got a couple weeks left between the remaining primary and then secondary, hopefully it clears.

its amazing how a drink as awesome as beer can look as gross as it does while it ferments.

Haze is generally appropriate, according to BJCP, in a saison so I wouldn't sweat that. But, yeah, you used quite a bit of wheat in this recipe and I wouldn't be surprised if it didn't clear for a long while unless you used Whirlfloc/Irish Moss.
