Given that my apartment gets pretty hot in the summer, that air conditioning is expensive, and that I have to get car repairs done instead of buying a temp controller and used chest freezer, I thought I'd try using Wyeast 3724 Belgian Saison as my yeast of choice this summer.
I have a bunch of recipes that I think would work well, but I wanted to get some outside opinions on this stout recipe (for which I already have the ingredients). It's my house stout; I usually use WLP002 English Ale, but it's already broken 80*F in my apartment, so I'm not sure I want to risk that.
So, how do you think the Wyeast 3724 Belgian Saison yeast would work with the following recipe? Would this still be a beer worth drinking? Would the saison yeast work with all those dark grains, and all that saaz?
