Hey guys - I'm brewing a Saison with an OG of 1.07 and set out last night to make a 2L starter per the calculator. I'm using a Wyeast 3711. Long story short, I put the proper amount of DME in the starter but somehow, someway, screwed up on the water amount and didn't put enough in to bring it to 2L - I'm sitting around 1.6 - 1.7L. Again - I have the proper DME in there but the volume is below the 2L recommendation.
Here are the options that I see now (12-hours into this being on the stirplate at 1.6L volume):
1. Throw it out and start over.
2. Top it off with water and bring it to 2L.
3. Buy another yeast pack and pitch it in there (assuming the yeast is over stressed due to the lack of sufficient water volume).
4. Roll with it as-is and hope for the best.
