Is the specific gravity affected my the wort temperature? So if I measure my OG at flameout ~175 degrees and again when it is down at say ~72 degrees are the gravity readings going to be the same?
 
The SG is affected by temperature. You can google hydrometer temperature correction to access any number of on-line calculators.
Be warned though, that if the temperature is > about 100F, the corrected SG is not going to be very accurate.

20 deg C i think is the ideal, well that what hydrometers are calibrated to 1.000 as.

Most hydrometers are calibrated to 60F (20C), so you'll need to correct for anything other than that temp. The further away from the calibration temp you get, the less accurate the reading will be, even after correcting. I try to get my sample to within 30F of the calibration temp before taking a reading.
 
Cool the sample to 90 degrees or less, then take your reading. Then use a correction table to get the actual reading. Taking readings over 100 degrees is a waste of time, even with the correction charts, since the readings are notoriously inaccurate.
