Sour Beer from a Kit (think it'll work?)

So, I really didn't feel like throwing together a recipe today, and my brew store makes it extremely hard for me to actually buy the grains in the amount I need (they only sell 16oz packages of specialty grains...ugh)

So, I remembered once I had bought an AHBS Scottish beer and soured it with the dregs from the following beers:

Odell's Friek, Petrus Oud Bruin, Petrus Aged Pale, Monk's Cafe Sour Red, Goose Island Juliet and Goose Island something else.

Added to that, I picked up White Labs Lactiobacillus Debrukeii.

So, I've actually got a keg with just the dregs of the aforementioned sour beer I once had. Can I just pull the tap handle and throw them into the new beer I plan on brewing?

And that recipe is:


Extracts
3.3 lb Amber Barley Malt LME (Muntons)
1.0 lb Amber Spray DME

Grains
4 oz Crushed Crystal 60L
4 oz Crushed Smoked
4 oz Crushed Chocolate
1 oz Crushed Roasted Barley

Hops
0.5 oz Columbus Bittering (Alpha Acid 7.4%)
0.5 oz Columbus Aroma (Alpha Acid 7.4%)

Yeast
1 sachet (11g) Windsor Brewing Yeast (Danstar brand)
 
Yes, you can justt dump the beer on the old dregs.

Brew what you want, but if it were me I would:

- Drop the smoke (not sure how it will work in a sour).
- Drop the roast (but 1 ozs isn't much anyway).
- Keep IBUs below 10, as too high will inhibit some of the bugs.

That recipe is a low gravity beer, OG will be somewhere around 1.035.

Perfect! I dropped the smoke but forgot to keep it out of the recipe. The original scottish I brewed which turned out great had an ounce of peated moss. So I kept a half ounce of the smoke.
