Sabro can be weird. Especially in large quantity. I love it on BA beers where it can blend with wood and spirit but it can throw some big suntan lotion vibes in a large dry hop or whirlpool.
 
fwiw, when Sabro first came out the reported character mix (citrus, coconut, cedar, mint, cream & herbal) mystified me as to why anyone would brew with it. I've had two different commercial beers with Sabro and the cedar and mint characters were off-putting on both. One I didn't even finish (sacrilege!) but my expectations were very low going in on both so neither was a big loss. Confirmation bias in spades I s'pose as well, but I'd still never brew with it...

This is what I'm hoping for -- tropical and stone fruits in the background.
 
Sabro is like 70% coconut, 25% cedar and like 5% citrus/vague fruitiness to me.
The FG sample had lots of fruit in it -- but that also could have been the sweetness of the pre-fermented wort. We'll see -- I'm optimistic. The sample had ample bitterness but I didn't detect any mint or grass.
 
My annual spelt saison, though i'm planning on doing at least 3 a year now, maybe more. It's by far my most enjoyable beer, i'd say ever. Need more champagne bottles, but, they're pretty cheap.

72% Atlas
24% Malted spelt
4% white sugar

Spalt and EKG 60 min
All sulphate
Long low mash temp

Wyeast 3726

1.046
46 IBU

I haven't used sugar so far in this beer, but i'm getting close to maxing out the robobrew grain bill wise, so i'd rather use some sugar than worry about fitting it all in.
 
First attempt at an rye IPA, keeping my fingers crossed as my pipeline is very dry. Needed to get rid of some rye and thought to myself, why not an IPA.
Also I would have brewed a stout earlier this weekend, but I've had a slight issue earlier this week. When checking on my stock after a summer hiatus and finding my rolled oats and barley hosting a colony of grain beetles, I was certainly not pleased... And they didn't even have the courtesy to pay the rent.

That sucks about the squatters- I put my base grains in those husky sealable totes- they are a little spendy, but worth it yo keep out unwanted guests.

Yeah, was certainly an unexpected surprise. I think I've learned from my mistake though.
I'll be looking into some squatter proof storage for my grain in the future as well. For now I've improvised with buckets, lids and tape around the edge.
 
Hazy DIPA, which is a continued escalation of the Hazy IPA I'd been planning on making a little while back.
Up to 8.5% target ABV now, dropping the Luminosa and keeping things simple(r) on the hopping side.

Just...T90 Mosaic, T90 Simco, LupoMAX Mosaic, LupoMAX Simcoe, Spectrum Mosaic and Incognito Mosaic.

I used a Kveik yeast at 30C.
