Beautiful almost fall day in Upstate NY, great for brewing and my last extract brew before I switch to the BIAB method.
 
Going to attempt v1.0 of my Citra Pils finally. Possibly a terrible idea, but also going to implement some LODO tactics during this brew sesh and see what happens.
 
Sunday is earmarked for a brew day. I now have my harvest dried, so plenty of hop fodder for a brew session. Is it time to start the Christmas ale? Possibly. Is it time to go full stout season for winter? Also debateable. The trouble is that I have Dark malts, and I'm itching to use them!
 
Haven't brewed in over a month (pipeline got too full!) so I'm looking forward to brewing at least one this weekend. Been working on a Wassail recipe, also want to do a Dead Guy Clone again. The Wassail will be a partial mash, haven't done one of those in quite a while (yay no mash tun to clean!). Then AG for the Dead Guy. Can't wait!

The struggle is real. I'm waiting on my pumpkin for October 1. That way there's still some time for this hot weather to cool down before pumpkin season. A stout sounds nice too. I still haven't decided.
 
Bottling 5 gallons of blonde, and brewing 10 gallons of brown Porter.
And somewhere in all that mess, also working on my equipment.
 
My first lager, 5.5 gal batch from an award winning recipe of Octoberfest shamelessly stolen form this site. Oh and first decoction mash. The Beersmith instructions make it seem so easy. ;)
 
IN addition to my own brewing, I am going to the inaugural run of my buddy's new brew rig. Went all stainless from SS Brewtech. He is hitting a very aggressive black-rye IPA. Cannot wait to see how everything goes.
 
Just finished the beginnings of a Gose, got the wort and Lacto in the fermenter and loaded into the chamber to keep up to temp.
 
Making a DFH Tweason' Ale clone hopefully later today or tomorrow. My wife loved the first attempt and her friend did too. So much that she asked that I make her a batch and she would pay for the ingredients.
 
Making a Czech Pils (BIAB) this Sunday with/for my father in law. Never made one before so here's hoping it comes out decent.
 
Come o'dark thirty tomorrow, I'll be up brewing an Oatmeal stout. I hope I didn't mess up not getting some rice hulls for the mash, the old ale I brewed two weeks back was damn near a stuck sparge, 2 lbs of flaked oats in this one might make things even worse. Hoping for the best though!
 
I put a Black IPA down last night. First time using my stirplate and this morning the was a healthy amount of bubbling in my blowoff flask.

Cheers! I pitched my yeast at like 3pm. First time using a stir plate as well. Already have air lock activity!

Must be a stirplate virgin weekend! I made three starters on mine after finally buying it on Wednesday. Gonna be a busy day, we have a Kolsch and Scotch Ale planned.
 
Finished my DIPA "Krausenous Funk" this afternoon. Went really well. Looks like i am going to have a firmly bitter, dank and resinous brew. Apollo, Galaxy, Amarillo, Idaho 7, and Citra. Cannot wait.
 
Brewed a pumpkin ale last night. The recipe (from beersmith) didn't call for rice hulls. It didn't matter as 2 lbs. didn't help. I really don't think this recipe was meant for recirc. Thickest mess I ever met. What a workout! Not sure how it'll turn out but thought it was worth a try.
 
First time using my 10 gal 3-vessel system. Took me around 8 hours from starting to cleaning. Hopefully I will reduce this time when I get more familiar with new system.

Result: 5.5 gal APA
 
Going to brew a Belgian blonde ale using S-33 yeast. Also going to bottle my saison.

It feels weird not to be making a yeast starter. I haven't used dry yeast in over a year now.
 
i am scheming an IPA with 16oz of Citra and 16oz of Simcoe.... only question is whether to split that across 10 or 15 gallons.... decisions, decisions!
 
Might get around to a coffee stout for winter. We'll see how things play out with the family life...

This ipa is 1oz each simcoe, citra, mosaic at 10, WP, and DH. Small amount of warrior at 30min. 5.5gallon batch. Mash at 155F. Had wife, who hates beer, smell it. She swore it was pineapple/mango juice. Just a thought..

Back at it after a brief break. (m)Oktoberfest this weekend and introducing a friend to the craft. After cracking open my keg of Oktoberfest from July, I realized I was going to want more soon.
