Recipe says to wait 3 weeks for it to carbonate.

Is there a way to know when its ready? or do i just wait 3 weeks and crack one open?
 
I NEVER wait 3 weeks to taste one. Try one after 1 week(cool for 24 hrs). If not carbonated enough for you, then try one a few days later. I think they taste best in 2 weeks.
 
Let it sit for 2 weeks, then put one in the fridge for a few hours and then pop it open. You need to get it cold to really sink the carbonation into the beer. If it seems good to you, then put the rest in the fridge. Beer gets better after some cold conditioning time as well. People say wait 2 weeks, I usually don't have that much.patience myself.
 
I believe it takes longer to carb. It also has a different percentage of fermentable material, so I hope you used a calculator to determine hooch to use.
 
To paraphrase the Right Honourable Revvy, opening a beer early "just to test it" means one fewer beers when they're nice and properly carbonated.

I can't fully explain it, but something magical seems to happen to all my beers at two weeks and two days. A two-week bottle-conditioned beer is still a little flat. 16 days is good. Three weeks is usually better. I've never, ever regretted waiting a month.

That said, I waited all of five days to try a bottle of my first ever brew, and it didn't suck. It was flat, yes; and it was yeasty, cloudy, and tasted of cider, but dammit, it was beer I had made - therefore a beautiful thing.

What was the OG/FG of the beer? Big beers carbonate more slowly.
