Simple fix for keezer temperature probe failures?

As I'm building a keezer I've been researching some of the best temperature control units are. It seems that an Inkbird 308 is very popular and works well if the probe isn't damaged. Apparently a number of people have been putting the probe in water to give a more accurate temperature of the beer but the probe isn't water proof. I know they make a long 1 foot probe all stainless that would work or perhaps buy one of the units with a waterproof probe. However at this time if you want the WIFI model you found have to solder on a different probe if you want waterproof.

Wouldn't a simple fix be to place the probe wherever you would like in the keezer, but not in liquid. Then set to your desired temperature. After some time pour out a glass and take the temp of the beer then readjust your setting on the temp controller?
 
I just taped the probe around a soda can and keep it midway vertical in the keezer, like say on top of the kegs Aluminum is a better conductor of heat than glass for example. If that soda can is the right temp so will be the beer.

Do you have 16 five-gallon cornies in there? Do you brew small batches often? Have people over a lot? Just keep things on tap a long time?

That keezer requires some explanation.

Okay all seriousness, 14 five gallon, and two 2.5gal kegs. I keep things on tap a long time, i make mostly dark beers, and one NEIPA just to say I have one. Combo of beer, wine, cold brew coffee, soda, gatorade, water, etc. Dont have people over too often, but when I do, its 15+ people drinking. Check some of my threads, im building myself a private speakeasy/nano brewery :p
 
Killer. If I had empty taps regularly I'd definitely have water on tap at all times. I thought about kegging wine at some point but have so far stuck with bottles. How do you keep it from carbonating?

Separate nitro bottle (beergas) in addition to the co2. I agree I prefer bottling too, but some of the cheaper wines I keep kegged for the ladies who dont mind a bit of carbonation. I have used pure nitro once goes well with the cold brew coffee, but beergas only adds a slight carbonation to cold brew coffee, I see it as a plus using that carbonation to pour it like a guiness.
