Two weeks ago this Sunday I brewed milk stout (5 gal AG batch). I went to my local home brew store to buy two tubes of 060 white labs yeast since I didn't have enough time for a starter. They only had one tube available so instead of mixing yeast strains I decided to just pitch in one, knowing that it might not be enough. Not only did I hit a higher efficiency rating than expected (88%) I also ended up with a little over 6 gallons in the primary. I am almost two weeks in and as of right now the FG is only 1.023, which puts me at about 4.6% abv. My dilemma is that the beer tastes phenomenal! It is very smooth and has all of the qualities that I was looking for. Do you think that I should just stick with the good beer that I have (even though its abv is on the low end for a sweet stout) or should I pitch another tube of 060? This would raise the abv but could change some of the taste and smoothness of the beer.

What are your thoughts??????

1.023 is about right for a milk stout, as some of the ingredients, like lactose are unfermentable and add to the FG. Some ingredients are less fermentable, like darker crystal.

So I think you're right in the ballpark. More yeast won't help at this point, unless you do something like racking onto a yeast cake.

Check it in a week. If the SG is the same, bottle it!
