Hi, i've recently posted on here and got some good advice so thought I'd try again. My cider has been sitting in demijohns for over a week now and it seems the fermentation has slowed down loads, but I am planning on leaving it for a few more weeks. However, there is a good layer of sediment at the bottom, should I remove this or does it not matter for now?

Also, what exactly is the sediment? Dead yeast?
 
Tired yeast. I'd leave it until fermentation has stopped, then a week or so longer to give it time to clean up after itself.
