Hey wine forum,
Picking up a few pails of juice at the end of April. I'm going to ferment in my chest freezer at 80F but wasn't quite sure what temperature I should maintain for my secondaries and further rackings. Haven't seen much info on this other than to avoid fluctuating temperatures. Ideally I'd like to be able to keep secondaries in basement to free up my chest freezer (65-68F usually). Any help is appreciated,

Cheers.

If you wait to rack to secondary till the wine ferments dry, you can get away with pretty cool temps. My basement is around 55 right now and it seems like the dry wine I keep down there clears quicker than the wine that stays at 64.
