Coming up on about three weeks since I racked my pineapple wine to its secondary glass carboys. Though its clearing up nicely it is still bubbling and there is a large amount of sediment at the bottom. Will leaving this in the secondary cause any off putting flavors? I figure its got at least a couple more months until ready to bottle.

In secondary, you should rack every month until less than 1/4" lees in that month.

Bottling should be far from your mind, 6 months at least.

I agree. Rack whenever there are lees 1/4" thick, or if you have ANY lees at all in 60 days, even if just a dusting.

After at least 60 days in a new vessel, if no new lees form at all (not even a light dusting), and you can read a newspaper through the carboy, then it's ready for bottling.
