Well I am about a week into my second project. I am trying my hand at a 5 gallon batch of the previous recipe. As a side note, I found bottling and letting it age for another week or so did wonders to the taste. That being said my 5 gallon batch is not as active as when it was in the 1 gallon jar. I went one step further and added raisins for yeast nutrient, and there is activity in the bucket... just not like the activity in the gallon jug.

I'm also brewing some cider in with an ale yeast, and that has been hopping with activity! Hoping both turn out well. :ban:
 
The pitching rates are probably different from the 1 gallon to the 5 gallon batches. Meaning there might have been more initial yeast cells in the 1 gallon batch. (per gallon) I'm sure it will be fine, just give it some time to build up the yeast population and I bet it takes off.
 
Yeah, I have to remind myself that I dumped the whole yeast packet in gallon jugs and a packet in the 5 gallon bucket, but there's more head room in the bucket. There is airlock activity in the 5 gallon it just not as much as the one gallon.
