Hi there,

In my pursuit for something similar to the Schlenkerla smokiness I was wondering if anyone knows what strain they use for their Märzen? Are they using the same strain for the rest of the range, apart from their Weizen?

Also, what lager yeast do you think would express smoked malt the most?

I've brewed Schlenkerla-style rauchbiers many many times (mainly the Urbock) and with different yeasts but haven't seen any difference among yeasts. By far the most important element in this beer is the smoked malt. Specifically, source and amount. I was never satisfied with store-bought, so I now smoke my own (with beech, like Schlenkerla).

This is a damn hard beer to do well. After several batches, I'm STILL refining my recipe and processes. The most challenging beer I've ever brewed!
