While picking up supplies at my LHBS after work Friday, I grabbed De Proef Brouwerij's Saison Imperiale. This beer made me happy. :ban: I currently have the dregs in a starter hoping to get enough to work with...

I've searched pretty heavily and wasn't able to find a clone recipe which is fine, but can any of you perhaps recommend something similar?

I love Saisons but have not tried that one yet.

I would also like to see a recipe. Always open to trying new brews.

Never had this one. But I did some digging on the beer and here's what I'm thinking.

Almost all pils (as saisons typically are). Add a bit of special b for color (1/4oz). Reviews said golden light amber color Mash a little on the warm side (reviews said somewhat sweet for a saison) so around 150-151. Add some simple sugr for booze.

Really saisons are about yeast character and dryness. So I think that if you have the dregs you should get a comparable flavor to the original so long as your grist is simple and gets you to the right abv.

I'm gonna bump this because I'd LOVE to see some good Saison recipes up in here. Ever since trying Funkwerks Tropic King I've been a man on a mission when it comes to brewing a nice saison, but the recipes are so rare.

The Brew Hut teamed up with Funkwerks to provide a Pro Series extract kit for Tropic King (i.e. they cooperated with the head brewer at Funkwerks, so it's not a clone). Mine is in secondary right now, so I don't know how close this comes, but here's the recipe for a 5gal batch:

Specialty Grains (steep for 30mins @ ~150deg)
1.25lbs Belgian Munich
4oz Carapils
6oz White Wheat

Extract
Bring to boil and add 6lbs Light LME

Boil (60mins)
0.6oz NZ Rakau @60
1.5lbs corn sugar @15
0.65oz NZ Rakau @10
0.75oz Opal @0

Yeast
Wyeast 3711 (pitch below 65deg, then ramp up to 75deg over 48 hours)

Fermentation
1 week in primary (I did 11 days), then rack into secondary and add 0.5oz NZ Rakau as dry hop. Let it clear for 1 week, and bottle.

OG: 1.065
FG: 1.005

I'm looking forward to seeing how this turns out. It smells and looks awesome so far :)
