1.5oz amarillo FWH
2oz amarillo post boil
2oz citra post boil

amarillo are 8.4AA
citra are 13.1AA

debating yeast at this point. first time playing with this hop blend. any other ideas would be helpful as well. i have these ingredients already. any changes to the grain bill would have to be in addition. basically, we can turn this into an IPA if need be. i have a bit more amarillo and citra, been debating adding cascades.
 
Well, I might say the opposite and because of the citra go with us-04. The 04 will give off a more fruity type flavor than the 05.
 
How well can you control temps? If you can keep it in the mid 60's I'd go with the 04. If it's going to be any warmer than that, I would go 05. In my experience, 05 is very forgiving when it comes to fermentation temps, whereas 04 can be a sonofagun if it gets over 65 unless you want your beer to taste like cantaloupe.
 
I'd go with US-05. Like kaboom said very forgiving fermentation temps. I like to use S-04 with an ambient temp of 57-60 it will jump up at about 8-10 degrees at the high point of fermentation. If you can control temps u can do either.
 
Be careful with 04. It's not as forgiven given the fermentation temps at play as 05, IMHO. Even if I have the adequate Temp controls, I don't know. I have made great IPA's with 05, and will never use 04 again unless the recipe demands it.
 
Might just be luck that our basement is 60-68 F, but my three brews with 04 seemed very nice. (Yeah, I have only a few brews to claim. I appreciate the caution about higher temperatures.) You could split the batch between 05 and 04. It could be pookey or great, never know till you try.
 
I've used both and have great results with each one. Given it's an IPA, I too would probably use 05. But,,,,we just did a dandy IPA and used 04 and it too is very good. Great answer I know, but generally on IPA's we use 05. Simie
 
I generally prefer 05 with the exception of my citra pale ale. I love how quickly the 04 finishes and I feel the fruitiness plays well with the citra in a smaller hop bursted beer.
 
I wouldn't suggest 04, even to some one I hate. For the life of me, I can't see why they still produce this crap. A few people love the twang it gives their beer. I'd stay way clear of it. 05 all the way.
 
I'd stay with the Safele-05....only used 04 once and it don't take kindly to higher temps even for 1 day by accident.
Another question is that 2 lbs of crystal malt in that recipe? Sounds like a lot to me but I am fairly new at making my own recipes.
 
yeah i wanted it to come off sweeter because of the fruity hops. it was a twist on the cascade/orange pale ale in the AG recipe forum. brewed it last night. ended up with aroudn 4oz of hops in it. not worried about it being too sweet.
