Rims on a budget

Planning my rims tube and controller based on the rims for dummies post. Question is....can I use galvanized? It's used for potable water.
 
I wouldn't. There will surely be somewhere that is not galvanized (threads, the ends, a scratch, etc). Besides, zinc is nasty.
I would consider copper as a cheaper alternative to SS.
 
Zinc won't be an issue. The yeast will like it. The pipe will still rust though and you'll have to replace it. Copper is a better option but stainless isn't all that expensive.

Setting up RIMS is a fairly expensive project. Maybe there's a more frugal approach you could take rather than going for a budget RIMS tube.

I estimate this project done cheaply somewhere around $350:
Pump: $150
Controller with Hardware: $100
RIMS and Fittings: $100
