So I have a couple packages of yeast in my fridge that I only used half of, for small 1 gallon batches. Is it ok to reuse this yeast for another 1 gallon batch? It's been in my fridge for a few months, don't wanna risk using it if it won't work....has anyone done this?

I have used an opened, 2-month old pack of Notty before, and it worked as well as the first half did. I folded it up, taped it down, and sealed it in a zip-top bag, and yeah, it was fine.

You'll be fine. I don't go nearly as far as slym, just rolling up, wrapping with a rubber band and keep it in the fridge. No problems.

It'll be fine. For longer term storage put it into a vacuum sealed container and toss it into the freezer
