Adam at Floodland brews on Seapine’s setup in South Seattle then hauls the wort up to the Floodland space in North Seattle where everything ages over time. It’s just cost effective for him with such a small operation.
Troy Casey did that too. The difference is that they both brewed the beer and have the talent. They just didn't have the space to have their own systems.
A lot of lambic producers do, including De Cam and 3F (other than A+G and a few other special blends).I know a few places that do that. The rare barrel has wort delivered to them and then they add it to barrels and blend. Doesn't Tilquin do that too?
Isn't Drie Fonteinen working towards brewing all their own wort though? I thought they partially stopped doing it in like 2009 because they had that disaster where their temperature control failed and they couldn't afford doing it anymore. They do want to, and volumes of A&G are way up. I don't feel like they can't brew big beers like that again with their own wort though. It just so happens Blauw was made when they were getting wort from others. It was my birthday and I was at a Funk Factory release at Oso when this pic was taken and sent to me. I keep it favorited in my phone and send it to Abe and Dunt sometimes as a joke.
