I am currently 1/2 through my keg of a chocolate porter, everyone loves it, and am wandering what other types of beer have a fairly quick turnaround. Since i have started sharing with co-workers, the keg just doesn't go as far. I was thinking of an oaked porter, but don't know if 3 weeks would be long enough for it to develop the flavors. Coffee, honey, oak and spices have been suggested at work. Any suggestions would be appreciated.
 
Do something easy for your fast beer while you wait on something better. I am ageing some coffee stout and drinking a brown ale.

Trying to get something really quick for Xmas, I did a cream of 3 crops knock off - 2 weeks in primary and put on gas tonight, could drink this weekend.

Something like an oaked porter sounds like it could use some age.

From your flavor ideas - do a pale ale or brown and spice / honey addition.
 
I suggest something hoppy. Like an pale ale or IPA. Dry hop at about ten days and keg 7-10 days after that. I have an IPA going right now that will be bottled in two weeks and most likely drinkable in 3.
 
Wheat beers go pretty quick. I brewed a German heff, left it in the primary for 10 days, bottled it and it was carb'd and ready 4 days later. My wire even drank 3 of them! I would be careful about dry-hopping longer 7 days. The hops can develop a soggy / swampy flavor if left wet for too long.
 
I always find hoppy go fast. I find them better when they're fresh. I like to age my stouts, porters, brown etc. for example, my brown is good after it's taken a couple weeks to carb in the keg but it's just down right delicious if I let it sit in the keg for longer.
