The duck is a compromise. I like rare SWMBO likes dead.

Served with honey roasted parsnip and a port, cranberry and blackberry sweet sauce.

Yes that is the Goblin to go with it.

The wok is full of curry (to be) for tomorrow. It tastes 100% better a day old.
 
Cool deal. I can't wait till my Muscovies are ready to harvest. Yeah, rare duck all the way baby. :D
 
I've only smoked ducks. Might be interesting to try your way, although none of the local markets carry duck. Around here you raise them or shoot them.
 
I can't really get duck here in stores either. Just have to shoot them.

Try cutting some duck breast in bite sized pieces. Marinate in italian dressing or other dressing/marinade of choice. Put a little cream cheese on each piece and top with a jalapeno slice. wrap in bacon and secure it with a toothpick. Grill or smoke. Great snacks/appetizers. Same thing can be done with dove breast.
