Hi all!

A friend and I are going to brewing this baby some time next month . This is my first imperial stout and I havent been very successful (IMO) at making a really good stout, (like ever!). The fermentation is always good, and my stouts are irrefutably stouts, but always lacking some of that delicious yum yum character that I taste in other people's stouts.

What do you think of this grain bill? What does it need? What should I remove?

The plan is to load my cooler tun to the max, sparge extra preboil wort, and boil till I reach target gravity; so, the 2-row and red wheat amounts may not be exactly precise.

Why the Chinook?
Also, no C malt?
You'll need some sweetness to counter those IBUs
Maybe some c120?

The chinook is because that is what I have on hand. However, it has a pretty resinous bitterness in my experience. So perhaps I will swap it out for magnum. I dont usually use crystal malts in much anything, unless it be something like Special B. Always add munich to my beers though. Probably why my IPA's are really good but my Stouts are not so good.

What about this grainbill now? Do you think some flavour hops would be preferable? Am I too light on roasty character do you think?

Grain bill looks better to me. You still just have malt and roast. I assume you are looking for some complexity. Maybe up the chocolate? Coffee malt?

I'm still perplexed by doing all your hops at 60m. Maybe back that off and look at northern Brewer, Golding or cascade later in the boil.

I'm no expert on RIS by any means. Hopefully others will chime in
 
Thanks for the feedback. Ill probably up the coffee and roast barley. And add some later addition hops. Will post the final recipe with results to follow. Thanks again!
 
Imo u need some depth in the c malt. I used some 40 and 80 and a little 120 last time. Maby its overkill i thought it was great tho.
