I developed a Purple Ube Stout recipe based on Uncovered Roots by Pure Project in San Diego. I am still tinkering with the post-fermentation ad-ons; both amounts and time. I used whole coffee beans and a whole vanilla bean (not sure if the vanilla is necessary with the Ube). I am thinking of reducing the coffee and cocoa nibs to 48 hours to reduce bitterness but if anyone has experience with these ingredients, I welcome your feedback.
