100,00 g Saaz [2,88 %] - Boil 60,0 min Hop 2 23,7 IBUs
50,00 g Saaz [2,88 %] - Boil 45,0 min Hop 3 10,9 IBUs
35,00 g Saaz [2,88 %] - Boil 20,0 min Hop 4 5,0 IBUs
15,00 g Saaz [2,88 %] - Boil 0,0 min Hop 5 0,0 IBUs

I was thinking mashing this at 67C. Do i need a protein rest?
I will ferment at 10C for 3-4 weeks using WLP800 and then lagering at 2-4C for many more weeks

Please comment, will it be too much to add 200g of hop pellets or will I be ok?
Should I add some carapils or crystal malt for head retention? I would like to make it as simple as possible and also true to the czech way of making pilsners.

Please any comment will be good
 
Should be fine as is - saaz hops with there low alpha do require quite a bit to get the IBUs where you would want. No protein rest necessary if you are using modern pilsner malt.
 
I think a 45 and 20min addition of saaz is kind of waisting it. Just adjust your 60min to get the amount of bitterness you want, and then toss the rest in for aroma. Thats really what saaz is meant for
 
Thanks, I wanted to make a "smash" pilsner but since the 2014 Saaz is so low in alpha i was considering substituting with some higher AA hops to reduce hops in the kettle
