I have a clone kit for Founders Breakfast Stout. I want to add some peppermint for a Christmas flavor. I need recommendations on how to add Peppermint and when. Thanks.

Background observation: coffee shops add seasonal flavorings "ala carte" just before the beverage is served.

Tinctures are often used to add flavor to a glass of beer. It's a "low risk, high reward" approach to adding flavoring. Here's a DDG search (link) related to peppermint flavoring.

How much do you think - it's a 5-gallon recipe.
It's likely a personal preference.

Add the tincture to a glass of beer. When you get the desired result, (maybe) scale it up to 5 gal at packaging time.

OTOH, and IIRC, tinctures may be "shelf stable" so adding the flavor just before serving may be an option.
