a hopped farmhouse cider. Looking to get fresh unfiltered cider from Costco or something, ferment with a kveik yeast strain and hope the cider with something nice to give it a bit of complexity. Quick turn as the kveik strains will ferment fully in a few days.

Any idea for hop type or rate? Probably will dry hop as I won’t be boiling or the like.

I’ve done a kveik ciser prior and it turned out really nice. Spicy and Clovy like fall. Added some cinnamon sticks and maple syrup to finish it out and it was amazeballs.

Planning to carb up the cider though. Anywho, any ideas are welcome!

Consider Citra Hops. 2 Oz leaf (No pellets as they just mush out and make a mess.) in 5 gallons. Dry hop in secondary for 3-6 days depending upon the flavor profile you want. Check it often. Do not go more than 8 days. I have found it tends to get a kind of grassy flavor vs. citra if left too long.
