So I made a yeast starter for a couple of brewers that was brewing some extra gallons of Baltic Porter for my club's barrell project. Our communications got crossed, and they made a starter for the extra brew as well. The question is, what do I do with 6.5 billion yeast cells of WLP862 Cry Havoc set in a 1.065 OG starter? It will handle a lager with an OG of over 1.080, or two batches of ales with an OG over 1.080. Any great beer styles out there for this yeast that has a traditional gravity close to or over 1.080?
