I am planning on brewing a version of Prairie's 'Merica next weekend and was planning on using Wyeast 3711 for primary and then adding Omega's "Bit O' Funk" (OYL-211) Brett Blend to the secondary to age for around 3 months prior to bottling. It was only after I ordered the yeast that I realized the Brett blend is a blend of 2 Sacc yeasts and 1 Brett (Brett B), not a blend of multiple Bretts.

Does anyone see any issues with pitching this blend into secondary? I would think the Sacc yeasts would drop out pretty quickly and the Brett would still do it's job but I am wondering how much Brett character I will get...

those sacchs basically work like brett for brewing-related purposes. Pretty sure one is the one that had to be reclassified. Its a sacch but pellicles and needs long fermentations like a mixed fermentation would. Ive used that blend before in a secondary without issues. The brett character isnt too aggressive ive found. I would make a starter with it to try and get it to work faster

Thanks for the response! So how long did you let yours sit in secondary after you pitched the OYL-211? I definitely want there to be a noticeable funk but not overpowering (which is why I went with the 'Bit O' Funk" in the first place)

I think I did 3 months on the blend. The gravity was stable around 6 weeks in I think though. I didnt really get any hint of funk, just that bracing brett tartness and fruity flavors
