I name some of my beers after geologic features in the Wai`anae area. Ohikilolo is a pyramid shaped peak on a ridge not far from my house. Since I'm making an Oktoberfest ALE I I've given it the name of this peak.

I do 1.9 gallon BIAB brews and try for 17 or 18 bottles. I used Designing Better Beers to get the basic ingredients for an Oktoberfest Lager and then w/BeerSmith I come up w/my recipie which looks like this:

2 lbs 4 oz Pilsner
12 oz Munich
11.2 oz Vienna
3.2 oz Caramel 20
------------------------
0.65 oz Hallertauer (3.8) hops at 60 min
1/2 tsp Irish Moss at 15 min
0.2 oz Hallertauer at 15 min
1 oz Malto-Dextrine at 5 min

1 pack SafAle German Ale yeast K-97

BeerSmith suggested a 75 min mash.-82% eff

After boil I was a bit high in water vol so I upped the flame and then boiled off to much.
I added 4 cups of water boiled in my microwave and hit the post boil vol I wanted.
I had 1.9 gallons right on my estimated post boil SG of 1.059.
So I'm a happy camper, it's in the fermenting freezer w/blow off tube as the 2 gallon fermenting bucket is pretty darn full.
