trickytunadicky opened one up as a palate cleanser relatively early into Cycle BA Day last week, and it was delicious. Thorpe any chance it is still around?
 
Since we are on the subject of bottles, here’s what coming up in the next few weeks:

- Saison Meer brewed with buckwheat from Duffin Station in Sugar Grove, IL and hops from Hallowed Hops in Central Illinois.

- Saison Avec: Spruce. Standard blonde base with fresh spruce tips from Colorado.

- Saison Meer brewed with local lilac flowers. These seemed appropriate since Lombard is the Lilac Village. The flowers were from my parent’s backyard since my wife wouldn’t let me take any from our yard :)

- Faible. This is fairly similar to Farmhouse Mild but more saison yeast character compared to FM’s slightly-more-funky profile. This batch sat in the fermenter with our culture for a while so got a bit more house character, but future batches will be bottled sooner as a cleaner saison and then will develop more character in the bottle over time.

New batches of Saison Auran and Farmhouse Mild will be bottled in the next week or so.

Finally, we are working on a few beers/events for Illinois Craft Beer Week. Nothing concrete yet but will make sure to post as things are confirmed!

Thorpe.. Long time follower of the blog and your style of mixed ferm brewing heavily influenced my own, so can’t tell you how excited I was when Rizdac shot me a bottle. This was absolutely wonderful. ISO everything you make! So stoked to see “one of us” doing this at the next level!

Afterthought Brewing Company is looking for a part-time employee who will assist (often independently) with brewing and packing as well as general brewery maintenance. Initial expected time is 10 hours per week with the opportunity to grow as the business grows. Hours are flexible with nights and weekends okay. Pay based on experience.

We use Blichmann equipment and have two side-by-side 30-gallon systems and brew exclusively what can generally be described as saisons/farmhouse ales. Fermentation is mostly in oak barrels with some in stainless.

REQUIRED

Passion for saisons and barrel fermentation/aging.

Desire to learn and take on more responsibility over time as the brewery continues to grow.

Ability to lift and move weights of 55 pounds or more (full grain sacks, sixtel kegs, and more).

Ability to stand, kneel, and generally move around and navigate brewing equipment for long periods of time.

Brewing experience and know how, whether as a homebrewer or in a professional capacity.

Knowledge of, and experience with, blending and packaging, including bottle conditioning.

21 or older and legally eligible for employment in the United States.

General competency in Microsoft Word, Microsoft Excel, and/or Google Docs.

RECOMMENDED

Undying love for De La Senne Taras Boulba, Orval, and Jolly Pumpkin Bam Biere.

Experience with fruit processing and refermentation.

General experience with maintenance of brewing equipment and ability to work with basic tools and perform simple handiwork.

Valid driver’s license and vehicle.
 
Yep re-confirmed this evening that Gin Barrel Aged Dandelion is just about a perfect beer. Always nice when the guy who makes the amazing beer is a genuinely good person as well.

Among a bunch of very good Gin barrel aged beers, this one more than stood it's own this evening.

Opened a couple of Afterthought beer over the past few days (loaded up my fridge with about 12 of them for drinking over the next couple of weeks).

Started off with Saison Meer: Rhubarb which was good, if a bit indistinct in the aroma / flavor profile. Earthy rhubarb character was present, but also had a vegetal aroma that wasn't the most pleasant. In the lower half of Afterthought beers that I've had so far on the commercial side.

Biere de Pieces #4 with Lemon Guava was phenomenal, and when I shared it with my father he described it as smelling lambic like which I couldn't disagree with at all. The lemon guava adds a nice tartness / sharpness to the flavor, and the blend works perfectly. Glad I've got at least one more of these left.

Did the Spruce one ever come out? I know I've gotten all of the other ones listed here, but wasn't sure if I just missed the Spruce.
