Hi i have made a cider using :
13l 100% apple juice
2.75l 100% pear juice
1kg dextrose
25g galaxy hop ( dry hopped)
Fermented at 18oc

Now im cold crashing and sitting on oak shaving then im going to back sweeten with pear juice.

Now does any one have any recommendation how much oak to use. Currently i have 30grams in there. I didnt want it to be to strong as pear is a gentle flavour.

I agree, pear juice is pretty neutral. I suspect with the apple juice, hops and oak you might not notice it. Hope that's not the case and you get the flavor you want.

Assuming a medium toast oak. 30 grams in 16L is in my opinion about right for a very mild oak flavor after 7 - 10 days. I tend to check it after 4 or 5 days or so and see if it is to my liking if not I leave it a bit longer.

Each of us have our own preferences you will need to experiment a bit to see what works best for you. The thoughts here are what tends to work for me.
 
Thanks for your help, this is my first attempt to make a cider feom scratch i usually make extract beers and kit ciders. So hopefully it turns out ok. It finished at 1.00 and estimated 6.5% i back sweetned with 2.75l of apple and pear juice and 500g of sugar so im now sitting with about 22l of cider after cold crash. Im now thinking i might need to increase the oak ?
