Is the small amount of oxygen I introduce to my lambic when removing the airlock and adding bottle dregs not a concern? Or are there tips for minimizing oxygen during this process?

Also, after eight months my lambic has a nice pellicle going. Will dumping in dregs break up the pellicle? If so, continue anyway or just skip the dregs and leave pellicle undisturbed?

I wouldn't worry about it. The first sour I ever brewed, I must have introduced dregs at least 6-8 times without any problem. I probably wouldn't do that again just in case, but opening the fermenter once or twice to pitch dregs shouldn't matter. If the pellicle gets disturbed, it will likely just grow back.
