So I brewed up a batch this week of a Dogfish Peche clone. ABV will only be around 4%. I pitched the champagne yeast Friday night. Only did a 5 gallon batch and have a conical fermenter. Every other batch I've done out of the dozen or so I get some bubbling from the blow off. Nothing from this batch. Peeked in and see some small yeast colonies throughout but that is it.
You think I am okay? Is it just because the beer is low ABV? Guess I will know for sure in a few days when i take a gravity reading.
 
Just afraid to dump the trub and take a reading already. Never had more than the small yeast colonies going but guess I could give it a shot.
 
You were absolutely right. Gravity is 1.010. Wow that champagne yeast worked fast (and quietly).
 
The air lock isn't the best indicator of yeast activity, I've got the same thing going right now with a berliner weisse. Never bubbled but it's done fermenting.
