Non-computer based controller

Is there such a thing as a non-computer based controller? I was reading that the BCS-460 and the brewtroller both needed to be computer supported. I'm going to be doing a heated HLT and Boil pot with the modded cooler in the bottom. it's going to be a gravity fed system. What i think i'm about is kinda like a dimmer switch. you turn it on and then crank it to the temp you want.....

You can use a pid or a pwm depending on the kind of control you want.

As in you can use any of the above to control a relay that will switch on/off your heater
