No Simcoe hops - what would you make?

So I was all set to make a clone of Green Flash's Hop Head Red. Guess I was a bit naive and didn't realize that getting Simcoe hops was not going to be so easy. So now I have everything ready to go for brewing tomorrow - except of course the Simcoe hops.

I have a pretty good supply of hops on hand including Summit and Amarillo (and all of the other hops required by the recipe except the Simcoe). Here's the grain bill and hop additions. I am thinking of just subbing in Summit hops everywhere Simcoe is called for but I'm open to suggestions. I'll probably call this beer "I wanted to be a Hop Head Red..."

14 lbs US 2 row
1.31 lbs Crystal 40 (substituted for Carastan)
1.31 lbs Carapils

0.5oz simcoe @90m
0.25oz simcoe @60m
0.25oz columbus @60m
0.25oz simcoe @30m
0.25oz columbus @30m
0.75oz simcoe @15m
0.75oz columbus @15m
1oz cascade @10m
0.5oz columbus @1m
0.5oz simcoe @1m
0.5oz each of amarillo, simcoe, columbus, centennial, and cascade for dry hop.
 
I'd go Columbus @ 90, Cent @ 60, Cascade @ 30, Amarillo @ 15, Amarillo & Cent @ 1, and just negate the Simcoe dry hop. Should be delicious!

I'm sure it would be good with amarillo for simcoe. I don't know where you got the recipe, but the label on the 22 oz bottle says "Amarillo Dry Hopped". I know the 4 pack bottles are marked differently - the bomber actually says " Is it a red IPA? You be the judge", or similar. That is some damn awesome beer though, eh? I guess if it wasn't they couldn't sell a 4-pack for a 6-pack price. Good luck - I think it's going to be delicious either way.
 
I think Docs Cellars in San Luis Obispo had some last time I was up.

Little guys but have great ingredients and they are big at heart. If you can wait a few days.

Yeah, I found that kind of interesting as well since the recipe I found on this forum was derived from the Can You Brew it series. Oh well, as the saying goes, it will still be beer (and a mighty hoppy one!)

I'll post up what I do in the end and let everyone know how it comes out.
 
I see what's wrong, you crossed wires with the west coast Ipa and called it Hop Head Red.
 
That grain bill is for the West Coast IPA. There is nothing there to make it red. The versions of the recipe I saw had C120 in it....

You know, November has pretty much been crossed wires for me all the way. :drunk: Oh well, I will be making a West Coast IPA this morning and maybe next time, I'll go for the Hop Head Red.

I just got a lb of Amarillo and I am planning on doing a hop head red but with rye.

By the way, the strike water is on the burner, it's supposed to be about 80° today and I'm ready to brew!
 
It will be fine...relax have a homebrew. Personally I would avoid the dry hop because it will hurt the yield...Just hop the snot out of it in the boil. IMO dry hopping should only be done with extremely fresh whole leaf hops.

But many will disagree with me on that.
