I've thinking of doing a American Wheat Peach beer for BiL house warming party. But, I just tried a Hefe that was locally brewed and it had a hint of vanilla in it. The wheat beer is in primary and wont be ready for any secondary additions for another week or so. What are yalls take on a vanilla wheat?

I just want a hint of either peaches or vanilla in the beer. I was gonna either add 4 pounds of peaches to the secondary or 2.5 ounces of vanilla extract to the keg. An suggestions or hints?
 
If you just want a hint of peaches, I'd add maybe 1-2 lbs to start (can always add more later), thought 4 lbs probably won't be overpowering.

As far as a hint of vanilla... You'll need WAY less than 2.5 oz of extract (assuming a five gallon batch). Start with a teaspoon, and titrate up based upon taste. Even better, skip the extract altogether, and use vanilla beans instead.
 
I'm not too fond of vanilla in my beer. I just think it's too much and gets in the way of all the other beer flavors. I think a peach wheat beer sounds much better... especially if you can keep the peach flavor light.
I do a kumquat wheat apa that's really good in the summertime. I think any kind of sweet or citrus fruit in a hoppy wheat ale is good for hot weather.
