I'm just getting started with home brewing, and I'm hoping for a bit of advice. I'm wondering if my SCOBY looks healthy. I took the pH, and the strips indicated it was about 3, but it's been 8 days and the baby seems a little thin to me. Any thoughts? Thanks!!!

Oh, and that's the mother that is folded over. It was disturbed when my cousin moved the brew about 2 days in. I'm sure that's obvious to most of you, just thought I'd include anything that may be important! Thanks again for any advice.

Yes, the new scoby looks a bit thin, but otherwise I don't see anything that could be wrong with it.

pH of 3.0 is probably ready; have you tasted it yet?
I generally harvest mine between 3.2-3.0
